  • 1 lb ground chicken
  • 1/4 cup panko breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp sriracha sauce (or to taste)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • For the glaze: 2 tbsp soy sauce, 2 tbsp honey, 1 tbsp rice vinegar, 1 tsp sriracha sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, panko breadcrumbs, egg, minced garlic, grated ginger, soy sauce, sesame oil, and sriracha sauce.
  3. Mix well until all ingredients are incorporated.
  4. Gently fold in the chopped cilantro and green onions.
  5. Roll the mixture into small meatballs, about 1-inch in diameter. Place them on the prepared baking sheet.
  6. Bake for 15-20 minutes, or until the Thai chicken meatballs are cooked through and browned.
