A Thanksgiving Piecaken is a layered dessert combining pumpkin pie, cinnamon cheesecake, and spice cake. It’s a visually stunning and decadent treat perfect for holiday gatherings.
Ingredients
- 16 oz Cream Cheese (softened)
 - 1 cup Granulated Sugar
 - 2 tbsp All-Purpose Flour
 - 1 tsp Vanilla Extract
 - 1 tsp Ground Cinnamon
 - 1 cup Heavy Whipping Cream
 - 3 Large Eggs
 - 2 cups All-Purpose Flour
 - 1 tbsp Baking Powder
 - 1 tsp Ground Cinnamon
 - 1 tsp Ground Ginger
 - 1 tsp Ground Nutmeg
 - 1 tsp Ground Cloves
 - 1 tsp Allspice
 - 1/2 cup Butter
 - 1 cup Brown Sugar
 - 1/2 cup Vegetable Oil
 - 2 tsp Pure Vanilla Extract
 - 1 9-inch Pumpkin Pie
 - 1/2 cup Unsalted Butter (softened)
 - 2 cups Powdered Sugar
 - 1/4 cup Heavy Whipping Cream
 
Instructions
- Prepare the Cheesecake Layer: Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line with parchment. Beat softened cream cheese until smooth. Gradually add sugar, flour, vanilla, cinnamon, and heavy cream. Mix in eggs one at a time. Pour into the pan, bake for 10 minutes, then reduce oven to 200°F (93°C) and bake for 30-35 minutes until the center is slightly jiggly. Cool and refrigerate overnight.
 - Bake the Spice Cake Layer: Preheat oven to 350°F (175°C). Grease a 9-inch cake pan. Sift together flour, baking powder, and spices. Cream butter and brown sugar until fluffy. Mix in vegetable oil, egg, and vanilla extract. Gradually add the dry mixture alternately with milk until combined. Pour into the cake pan and bake for 15-17 minutes, or until a toothpick comes out clean. Cool completely and refrigerate overnight.
 - Make the Frosting: Beat softened unsalted butter until creamy. Gradually add powdered sugar, mixing well after each addition. Stir in cinnamon, vanilla extract, and heavy whipping cream until light and whipped. Adjust cream for desired consistency.
 - Assemble the Piecaken: Trim the cheesecake and spice cake layers to be even. Place the cheesecake layer on a serving plate. Spread a layer of frosting over it. Add the spice cake layer, followed by another layer of frosting. Carefully remove excess crust from the pumpkin pie and place it on top of the spice cake. Frost the entire dessert, smoothing the sides.
 - Chill Before Serving: Refrigerate the assembled Thanksgiving Piecaken for a few hours to allow the layers to set before serving.
