- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 4 cloves garlic, minced
- 8 cups chicken broth
- 2 pounds Yukon Gold potatoes, peeled and diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup half-and-half
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 2 tablespoons chopped fresh chives or parsley, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots. Cook until softened, about 8-10 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and add diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Mash some of the potatoes against the side of the pot to thicken the soup, or use an immersion blender for a smoother consistency.
- Stir in half-and-half and cheddar cheese. Cook, stirring, until cheese is melted and soup is heated through. Do not boil.
- Ladle the trashed potato soup into bowls. Top with crumbled bacon and fresh chives or parsley.
Notes
- For a thicker soup, use less broth or add a cornstarch slurry.
- Adjust seasoning to your taste.
