Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup half-and-half
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 tablespoons chopped fresh chives or parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots. Cook until softened, about 8-10 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and add diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Mash some of the potatoes against the side of the pot to thicken the soup, or use an immersion blender for a smoother consistency.
  5. Stir in half-and-half and cheddar cheese. Cook, stirring, until cheese is melted and soup is heated through. Do not boil.
  6. Ladle the trashed potato soup into bowls. Top with crumbled bacon and fresh chives or parsley.
