Instructions

  1. Heat a large non-stick skillet over medium heat. No need for oil—the tortillas will crisp up beautifully on their own.
  2. Place one whole wheat tortilla in the heated skillet and immediately sprinkle half of the shredded mozzarella evenly across the surface, leaving a small border around the edge.
  3. Arrange the turkey slices in a single layer over the cheese.
  4. Sprinkle the remaining cheese over the turkey, then place the second tortilla on top, pressing down gently with a spatula to seal everything together.
  5. Cook for about 2-3 minutes until the bottom tortilla turns golden brown and crispy.
  6. Carefully flip the quesadilla using a wide spatula.
  7. Cook for another 2 minutes until the second side is equally golden and crispy, and all the cheese has melted.
  8. While the quesadilla cooks, mix the Greek yogurt with hot sauce or salsa in a small bowl.
  9. Transfer to a cutting board, let rest for 30 seconds, then slice into triangular wedges and serve immediately with the prepared dip.
