Ultimate Melt-in-Your-Mouth Turkey and Cheese Quesadilla

- 2 small whole wheat tortillas
- 4 oz lean deli turkey
- 1/4 cup shredded reduced-fat mozzarella
- 1 tbsp plain Greek yogurt (for dip)
- 1 tsp hot sauce or salsa
Instructions
- Heat a large non-stick skillet over medium heat. No need for oil—the tortillas will crisp up beautifully on their own.
- Place one whole wheat tortilla in the heated skillet and immediately sprinkle half of the shredded mozzarella evenly across the surface, leaving a small border around the edge.
- Arrange the turkey slices in a single layer over the cheese.
- Sprinkle the remaining cheese over the turkey, then place the second tortilla on top, pressing down gently with a spatula to seal everything together.
- Cook for about 2-3 minutes until the bottom tortilla turns golden brown and crispy.
- Carefully flip the quesadilla using a wide spatula.
- Cook for another 2 minutes until the second side is equally golden and crispy, and all the cheese has melted.
- While the quesadilla cooks, mix the Greek yogurt with hot sauce or salsa in a small bowl.
- Transfer to a cutting board, let rest for 30 seconds, then slice into triangular wedges and serve immediately with the prepared dip.
