Delicious Ube Cheesecake Overnight Oats for Busy Mornings

- 1 cup Rolled oats
- 1 cup Milk of choice
- 1/2 cup Ube halaya (The star ingredient!)
- 4 oz Cream cheese (Softened)
- 2 tbsp Maple syrup
- 1 tsp Vanilla extract
- 1/2 cup Greek yogurt
- 1 pinch Salt
- 1/4 cup Crushed graham crackers (Optional)
Instructions
- Soften the cream cheese by letting it sit at room temperature or microwave it for 10–15 seconds.
- In a medium bowl, mix softened cream cheese, ube halaya, Greek yogurt, maple syrup, vanilla extract, and a pinch of salt until smooth.
- Add rolled oats and your choice of milk, stirring until combined.
- Spoon the mixture into jars, cover tightly, and chill in the refrigerator overnight.
- Before serving, sprinkle crushed graham crackers on top and enjoy. Drizzle with honey if desired.
