- 1 unbaked 9-inch pie crust
- ½ cup (115 g) unsalted butter, melted and cooled
- 1½ cups (300 g) granulated sugar
- 3 large eggs (room temperature)
- 1 cup (240 ml) buttermilk
- 1 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- ¼ teaspoon salt
- ¼ teaspoon ground nutmeg (optional)
Instructions
- Preheat oven to 175°C (350°F). Place the unbaked pie crust into a 9-inch pie dish and set aside.
- In a large bowl, whisk together the melted butter and sugar until smooth.
- Add the eggs one at a time, whisking well after each addition.
- Stir in the buttermilk, flour, vanilla extract, lemon juice, salt, and nutmeg until fully combined and silky.
- Pour the filling into the prepared pie crust.
- Bake for 45–50 minutes, or until the center is set but still slightly jiggles.
