  • ½ cup (115 g) unsalted butter, melted and cooled
  • 1½ cups (300 g) granulated sugar
  • 3 large eggs (room temperature)
  • 1 cup (240 ml) buttermilk
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon ground nutmeg (optional)

Instructions

  1. Preheat oven to 175°C (350°F). Place the unbaked pie crust into a 9-inch pie dish and set aside.
  2. In a large bowl, whisk together the melted butter and sugar until smooth.
  3. Add the eggs one at a time, whisking well after each addition.
  4. Stir in the buttermilk, flour, vanilla extract, lemon juice, salt, and nutmeg until fully combined and silky.
