- 1 cup (200 g) granulated sugar

- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup (130 g) gumdrops, chopped (dust lightly with flour to prevent sticking)
- Extra sugar (for rolling)
Instructions
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms.
- Fold in the chopped gumdrops evenly.
- Cover the dough and chill for 30 minutes to make it easier to handle.
- Preheat oven to 175°C (350°F) and line baking sheets with parchment paper.
- Roll dough into 1-inch balls and roll each ball lightly in sugar.
- Place cookies 2 inches apart on prepared baking sheets.
- Bake for 10–12 minutes, until edges are set and bottoms are lightly golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
