Description

  • 1 cup (200 g) granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (130 g) gumdrops, chopped (dust lightly with flour to prevent sticking)
  • Extra sugar (for rolling)

Instructions

  1. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  2. Beat in the egg and vanilla extract until fully combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms.
  5. Fold in the chopped gumdrops evenly.
  6. Cover the dough and chill for 30 minutes to make it easier to handle.
  7. Preheat oven to 175°C (350°F) and line baking sheets with parchment paper.
  8. Roll dough into 1-inch balls and roll each ball lightly in sugar.
  9. Place cookies 2 inches apart on prepared baking sheets.
  10. Bake for 10–12 minutes, until edges are set and bottoms are lightly golden.
  11. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
