- 1.5 cups White beans (from one can)
- 1 cup Oats (gluten-free if needed)
- 0.5 cups Walnuts (chopped)
- 0.5 Onion (chopped)
- 3 cloves Garlic (minced)
- 3 Tbsp Chia eggs (made from ground chia seeds + water)
- 1 Tbsp Tomato paste (for umami richness)
- 1.5 Tbsp Tamari or soy sauce (for a savory kick)
- 2 tsp Onion powder
- 2 tsp Smoked paprika
- 1 tsp Italian seasoning
- 0.75 tsp Sea salt (or to taste)
- 0.5 tsp Ground cumin
- 1 pinch Cayenne pepper (or more to taste)
- Black pepper (to taste)
- 0.5 tsp Fennel seeds (optional)
Instructions
- Prepare Chia Eggs: Mix 3 tablespoons of ground chia seeds with 1/4 cup of water in a small bowl. Let sit for 5 minutes until thickens.
- Rinse Beans: Rinse the white beans thoroughly in a sieve, then drain and pat dry.
- Pulse Oats and Walnuts: In a food processor, pulse until the texture is coarse.
- Combine Ingredients: Add the white beans, onion, garlic, chia egg, tomato paste, tamari, and spices. Pulse until mixed.
- Shape Sausages: Form mixture into 6-7 sausage shapes, chill for 20 minutes.
- Wrap and Steam: Wrap each sausage in parchment paper and tin foil, steam for 35 minutes.
- Cook to Perfection: Pan-fry in oil for 7-10 minutes until golden brown.
