Vegan Shepherd’s Pie is the ultimate comfort food that combines hearty lentils, vibrant veggies, and fluffy mashed potatoes for a satisfying meal.


Ingredients

  • 1 cup green lentils
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 8 oz mushrooms, chopped
  • 2 cups Yukon Gold potatoes, peeled and chopped
  • 1/2 cup unsweetened plant-based milk
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish.
  2. In a saucepan, boil lentils in water until tender (20-25 minutes). Drain.
  3. Sauté onion, carrots, celery, and mushrooms in olive oil until soft (8-10 minutes).
  4. Combine cooked lentils with sautéed veggies. Season with salt, pepper, and thyme; simmer for a few minutes.
  5. Boil potatoes until fork-tender (15-20 minutes). Mash with plant-based milk and season to taste.
  6. Layer the lentil mixture in the baking dish and top with mashed potatoes. Bake for 25-30 minutes until golden brown.
