			- 1 tablespoon olive oil
 - 1 pound Beyond Meat Italian Sausage, casings removed
 - 1 cup chopped yellow onion
 - 3 cloves garlic, minced
 - 1 teaspoon dried oregano
 - 1 teaspoon dried basil
 - 1/2 teaspoon red pepper flakes (optional)
 - 6 cups vegetable broth
 - 1 (15-ounce) can cannellini beans, rinsed and drained
 - 1 (15-ounce) can diced tomatoes, undrained
 - 1 bunch kale, stems removed and leaves chopped
 - 1/2 cup full-fat coconut milk (from a can)
 - Salt and black pepper to taste
 - Fresh parsley, chopped (for garnish)
 
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the Beyond Meat Italian Sausage and cook, breaking it up with a spoon, until browned. Remove the sausage with a slotted spoon and set aside.
 - Add the chopped onion to the pot and cook until softened, about 5-7 minutes.
 - Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
 - Pour in the vegetable broth, rinsed cannellini beans, and undrained diced tomatoes. Bring the mixture to a boil.
 - Reduce the heat, cover, and simmer for 15 minutes to allow the flavors to meld.
 - Stir in the chopped kale and the cooked Beyond Meat Italian Sausage. Cook for another 5-7 minutes, or until the kale is wilted and tender.
 - Stir in the coconut milk until well combined. Season with salt and black pepper to taste.
 - Serve the vegan Tuscan soup hot, garnished with fresh parsley.

- For a creamier soup without cashews, full-fat coconut milk works wonderfully.
