- 2 cups broccoli florets
- 2 tbsp extra virgin olive oil (divided)
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- Juice of 1 lemon
- 1 tbsp honey or maple syrup
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C). Toss beet cubes with 1 tablespoon olive oil and salt. Spread on a parchment-lined baking sheet and roast for 30-35 minutes until tender.
- While beets roast, boil water in a pot. Blanch broccoli florets for 3 minutes until vibrant green, then transfer them to ice water to stop cooking.
- If not using pre-cooked rice, prepare brown rice according to package instructions (approximately 45 minutes).
- In a bowl, whisk together lemon juice, honey or maple syrup, remaining olive oil, cumin, coriander, and paprika until smooth.
- Assemble your bowl: layer cooked brown rice at the base and top with roasted beets and blanched broccoli. Drizzle the spiced dressing generously over everything.
