Description

Ingredients

  • ½ cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon

  • 2 large eggs
  • ½ cup Greek yogurt
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 medium ripe pears, peeled and chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking tin with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, salt, and brown sugar.
  3. In a separate bowl, whisk the eggs, Greek yogurt, oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped pears.
  5. Transfer the batter to the prepared tin and spread evenly.
  6. Bake for 35 to 40 minutes, or until golden and a toothpick inserted in the center comes out clean.
  7. Cool in the tin for 10 minutes before transferring to a wire rack. Slice and serve.
