Description

- 1 and ½ cups wholemeal flour
- ½ cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 large eggs
- ½ cup Greek yogurt
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- 2 medium ripe pears, peeled and chopped
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking tin with parchment paper.
- In a bowl, whisk together flour, baking powder, cinnamon, salt, and brown sugar.
- In a separate bowl, whisk the eggs, Greek yogurt, oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped pears.
- Transfer the batter to the prepared tin and spread evenly.
- Bake for 35 to 40 minutes, or until golden and a toothpick inserted in the center comes out clean.
- Cool in the tin for 10 minutes before transferring to a wire rack. Slice and serve.
