Description
Zucchini pizza boats are a healthy and fun twist on traditional pizza, using zucchini halves as the base. They are loaded with your favorite toppings and make for a great appetizer or main dish.

- 2 medium zucchinis (About 1 pound total.)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese (Divided into two portions.)
- 1/2 cup pepperoni slices (Or your choice of toppings.)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- to taste salt
- to taste pepper
- as needed fresh basil leaves (For garnish, optional.)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the zucchinis and slice them in half lengthwise. Using a spoon, scoop out some of the flesh to create a boat shape, leaving about 1/4 inch of zucchini around the edges.
- Place the zucchini halves on a baking sheet lined with parchment paper, cut side up. Drizzle olive oil over the tops and season with salt and pepper.
- In a mixing bowl, combine the marinara sauce, Italian seasoning, and half of the mozzarella cheese. Mix well.
- Fill each zucchini boat with the marinara mixture, then top with remaining mozzarella cheese, pepperoni, and grated Parmesan cheese.
- Bake in the preheated oven for 25 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.
- Remove from the oven and allow to cool for a few minutes. Garnish with fresh basil leaves if desired before serving.
